Rum Raisins and Apples
with Coconut Milk

Servings: 2 - 3

Ingredients:

  • 2 large Granny Smith apples, peeled, cored and cut into 1/2 inch pieces
  • 1 - 2 cups apple juice, preferably organic
  • 1 - 2 teaspoons sugar

In a small to medium size pan add apples, sugar and just enough apple juice to cover the fruit. Bring the apples to a boil and reduce to a simmer. Gently stir apples a few times to cook evenly for 3 to 4 minutes until just tender. Remove the apples with a slotted spoon to a plate to cool.

Making the sauce, you will need:

  • 2 - 3 tablespoons of spiced rum
  • 1/4 cup of raisins

Bring the apple juice back to a simmer, add rum and raisins and cook for about 3 minutes until raisins are plump. Remove the raisins with a slotted spoon and add to the apples. Continue to simmer apple mixture until it has been reduced to 3/4 of a cup. Then cool before combining with the cooked apples and raisins.

Serve room temperature with Coconut Milk non-dairy frozen dessert or your favorite ice cream, and top with toasted coconut flakes or walnuts. For the purpose of this recipe the Coconut Milk is So Delicious non-dairy.
