Carrot and Raisin Salad

Serves 3 - 4

Ingredients:

  • 4 or 5 large carrots (preferably California organic) peeled and trimmed
  • 1/2 cup raisins
  • 2 - 3 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon of Bragg Liquid Aminos
  • 2 - 3 tablespoons organic soy or almond sour cream or yogurt (optional)
  • 1 tablespoon mayonnaise (optional)

Grate the carrots either by hand or in a Cuisinart. In a mixing bowl, add raisins, rice vinegar, Braggs, and mix well. Refrigerate at least one hour. Before serving add sour cream or yogurt and mayonnaise.  Mix well.

Optional toppings when serving - chopped walnuts or pecans, pumpkin seeds or coconut.
