Healthy Muffin Recipes

Most muffin recipes are loaded with fat and sugar.  Healthy muffin recipes have merely undergone a few substitutions and additions that make these little cakes delicious and healthier to eat.

If you are looking for healthy low fat recipes, be sure they do not call for lots of eggs, sugar (I have even seen 2 cups of sugar used in a recipe), and lots and lots of butter, oil, or cream cheese. I am not condemning the use of any of these ingredients for baking except in the large amounts used.

There are so many tasty ingredients that are full of fiber and low in fat that can be added to make healthy muffins that there is no need to omit these little "goodies" from our diets.

Our recipes make a lot of muffins, and they freeze really well.

Besides being delicious, the Flaxseed Date Nut Muffins and the Cinnamon Carrot Muffins are both healthy breakfast recipes with ingredients like grated apples, grated carrots, chopped dates, dried apricots, pumpkins seeds and mashed ripe banana, just to name a few.

Flaxseed meal contains: Omega 3 essential fatty acids which are good fats and may help reduce your risk of cancer, diabetes, heart disease and stroke. Flaxseed lignans -  which have antioxidant qualities.  Flaxseed meal contains both kinds of fiber. Insoluble fiber - most fruits and vegetables are examples of sources of insoluble fiber. When this fiber gets wet it does not change. Because it stays the same it helps eliminate waste from your body quickly. Tips for making these healthy muffin recipes...

  • When adding wet ingredients to the dry ingredients, do not stir more than necessary or the muffins will be tough.
  • You can measure and mix your dry ingredients the day before you plan to make them. To keep the ingredients dry, store them covered in the refrigerator. This way you will have to spend less time on the day you actually prepare and bake them.
