Healthy Fruit Dessert
Peaches and Blueberries in Apple Syrup

Servings: 3 - 4


  • 2 medium peaches, peeled and thinly sliced
  • 1 cup blueberries, sorted, rinsed and drained
  • 1 cup apple juice, preferably unfiltered
  • pinch of salt
  • 1/4 teaspoon ground cinnamon
  • 1 generous tablespoon kuzu mixed with 2 tablespoons of apple juice
  • 1 teaspoon Blue Agave (optional)

Heat apple juice, salt, cinnamon and kuzu on medium high heat.  Stir occasionally until mixture comes to a full boil. Remove from heat and continue to stir for another minute.

Cool mixture for 20 minutes, add peach slices and stir. Continue to cool another 10 minutes, add blueberries and stir. Spoon fruit and syrup into 3 or 4 individual dishes. When fruit desserts have become room temperature, refrigerate for about 2 hours until very cold. Before serving, garnish with a few more fresh blueberries.
